Thomas loves browsing around places that sell antique building materials. It’s great for inspiration and he enjoys the hunt, never knowing what beautiful eco-relics he might salvage. A couple of months ago, he found an old Dutch waffle iron and decided it was a must-have item for Lescure. So, on a freezing February morning, I woke up to a nice fire and freshly made waffles for breakfast. Thomas and Willem had outdone themselves: the waffles came out super crisp and light as a feather, an early feast!
Heroes of resurrection
The waffle iron is embossed with floral motives on one side and a circle of eagles and roosters on the other. Of course these symbols sent my mind racing. Does this waffle iron tell the story of a great noble family? Time to read up on heraldry. The bird most frequently found in coats of arms is, by far, the eagle. Noble, strong and aristocratic. The ancient kings of Persia and Babylon! It symbolizes a man of action. A person of lofty spirit, high intellect and ingenuity. And the cock? He is a bird of great courage in battle, a hero, one who will fight with courage and perseverance. I also learned that in heraldry both the eagle and the cock are associated with the sun. And as a Christian symbol they both represent resurrection. I can’t help but smile…Two lovely men prepare themselves for a long day of restoration work on the estate by eating waffles embossed with these symbols. The universe is working its magic.
The Best Ever Castle Waffle Recipe! 3 tablespoons of butter*1,5 cup of flour*Cider or beer*Pinch of salt*2 tablespoons of sugar*1,5 cup of milk*2 eggs.Preheat waffle iron. Melt butter. In a large bowl, combine flour, salt and sugar. In another bowl, beat together apple cider and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook over open fire. The first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Enjoy!
